When I try to use my 5900 to copy stuff, the copy button doesn't work. I've tried going to the configuration set-up but all the copy button info is greyed-out. Help!

try create new folder rename new folder in temp as (Temporary) copy drivers for XP 32 bit in directory Temp click with right button on mouse on program then with left mouse button click properties and with left button click Compatibility and mark Run this program in compatibilitiy mode for Windows xp (Service Pack2) then click apply and ok after that run driver and install
You cannot make a copy if you are thinking of it like a photocopier. It doesn't have a scanner built into it . If this is what you are thinking there are several quite excellent scanners out there fairly cheap. The scanner will come with software that will make it and the printer behave like a photocopier. The scanner we use at home even has a button that we just press to scan and print a copy as well as software that gives more options.
If you want to just print multiple copies of the page then this you can do. You just have to go to print options on a program menu and tell it to print the page how many times you need. You can also change the number on the printer driver but if you don;t set it back after everything after is going to print a few extra copies.
There are no official drivers for CanoScan Lide 30 for Windows XP, so your problem is obvious. I suggest you sending an e-mail at Canon including details about your scanner (date purchased, serial number in text form or scanned) asking them to develop driver set as this model is very trade and at shops since 2006 or 2007.

You should be able to reconfigure the button settings by clicking on the "Settings" button in the CanoScan Toolbox application. Although the default setting is Scan, Copy and eMail, each of the buttons can be configured to do whatever operation you choose.
Select the copy tab and ensure that the "link to" is set to DRIVER, and press the SET button and select the printer you want to copy to from the dropdown, then OK, OK

well you gotta provide the details in scanners configuration where you want the scanner to copy your Documents to .i.e. whether you want it to scan and store it as a image or open it with some Application or you want it to print just assign any one task with proper configuration it will definately work.

Configure your scan buttons in the bottom right corner of your screen (when you click on the scan icon in taskbar). This will help you to go back where you want to be. You may find it easier to use XP's inbuilt scanning facility instead or scan via Photoshop.
