Take the pan off and to a good weld shop that can wweld aluminum.
They can weld in a new "boss" (threaded piece) and away ya go!

you can buy a repair kit @ any local parts store or a "Pan saver"
SOURCE: 2002 Jetta TDI 1.8 Oil Pan
I've changed several oil pans, but never a Jetta. I can tell u that I have always had to remove suspension parts, motor mounts, jack up the engine, etc, It's never been just an easy unbolt it and you're set job. Remember that the oil pump almost rests on the bottom of the pan, so you have to clear it to remove, and that's where the problem (and labor) is. Check to make sure there's no damage to the pump or oil pick-up tube. Yes u should tighten the pan in an alternating pattern, u want it to go up against the block evenly, it u bolt one side at a time you may tweek the pan so it doesn't fit well, and u will have oil leaks, so tighten criss cross pattern slowly all around (a couple turns each bolt before moving on to the next. Good Luck, and let me know how u do. countrycurt0
