No gas will come out when lighting pilot

There are almost always procedures and directions posted near the gas control for all gas fired units, whether it be deep fryers or home furnaces. The details are spelled out very plainly. If you are holding the large red button down, and you don't get any gas after a minute or so, you may have a malfunctioning gas valve, or a small piece of dirt in the pilot orifice. If this is the first time trying to light the unit after installation, it takes quite a while to fill the pipe carrying the gas to the valve, then to get the gas through the valve and into the pilot unit so it may be lit.
If it's been in use right along and it's now decided to be ornery, then I'd bet on the debris in or on the pilot unit itself, which you can clean with a couple of pipe cleaners. If it's the just been installed scenario then you just have to be patient till the gas gets there.

We acquires a business which has a chicken cooker.

In any case if you can not contact the company this is not a final. As you describe the problem is probably the high temeprerature thermostat and as you have mention it might not working and does not switch of the gas valve so the burner still burning.
You have the solution of using a thermostat from other brand like frymaster for example since all you need is a deep fryer thermostat which is an electrical switch and it tricker on and off by thermal sensor. If you remove the one from your fryer you can also read the temeprature limits on it and also lectrical power which is in A ( amper) and you can keep your fryer working without any problem. Their is a very good chance to find exactly the same thermostat as yours since the manaufactures use similar parts.
Good luck.

High Limit Switch

The thermostat in my hot tub has the exact same number on it which is odd, because hot tubs aren't supposed to go over 120 degrees. I wonder if the number stamped on the side of the part is fairly generic or merely refers to the casing.
If that's the case, you'll need additional info such the power rating on the fryer I suppose. I think fryers cooks at around 350 degrees -- maybe higher.
Also, mine has a sticker on it that reads TD103 149 and then below that 110F CR. I'm guessing that last part means 110 degrees Fahrenheit is where it tops out.

Pitco fryer showing heat failure even when the pilot light is on?

Question moved from Misc HEAT FAILURE - This means the heating system has failed to respond, which can occur because a high temperature limit switch has been tripped and needs resetting. On gas deep fryers, "HEAT FAILURE" may display if the pilot fails to light or if the pilot flame is too weak as detected by the ignition module.

Pitco Frialator deep fryer boils over randomly. Is the high limit sensor or the thermostat the problem?

Trade Chef here. Dirty oil. Wet food. Adding too much at one time. Thermostat problems would burn food. Use a good quality thermometer IN the oil against what the dial says.
