    that is the wrong diagram because I just replaced the thermostat on my 2000 sebring convertable join with the 2.5 v6

Location of 2001 2.7L v6 chrysler sebring thermostat location

Follow the TOP hose on your radiator to where it connects on your engine block. The thermostat is under the metal piece mounted to the block which the hose is connected to. It typically has to bolts to remove and you will find the thermostat under it once you remove the mounting.

Where is the thermostat located on a 2000 sebring

If you follow the upper radiator hose from the rad to the engine you should find it.
It will be under the housing that the rad hose connects to on the engine side. Usually the housing is held on by two bolts.
