If you want to very best method, buy thick cut (1.5" - 2") steaks. Cook indirect at 225 degrees until internal temp of meat is 110 degrees. Remove meat, turn all burners on high and sear meat over burner/charcoal (direct cooking). Remove steak at 125 degrees internal temp for med-rare.
Hot and turn one time.
On the grill! get yourself nice dryrub at your local food store and throw it the grill. i dont let my temp get higher then 300 i cook them low and slow!
