Freezes both my desktop and laptop and doesn't let me get to my work on it.

Let see if I got your posting/description right:
1. Whenever you connect/access your Maxtor OneTouch External in either the desktop or laptop, the PC will freeze/hang; and
2. The Maxtor OneTouch External contains important files/data that you'd rather not delete, hence you cannot format it likewise.
Your query "Is it possible I deleted something that gives me access and I need to reload that?"
- No, I don't think so. From what can be assumed from your post, "I did delete some stuff off..." thereafter, you started having problem with the drive, the probable problem is when you deleted some of your files, the Maxtor OneTouch External has not finished updating what was deleted in its master file listing when it was disconnected, powered down or a power surge or even a slight glitch. The result is the File Allocation Table got messed up. This is like the Table of Contents of a book. The pages/contents are still there but since the Table of Contents is either missing or damaged, the PC would not not what chapter is in what page. Thereafter whenever you connect it to a PC, the PC spends considerable length of time looking for the File Allocation Table, what files to what area of the Maxtor OneTouch External and eventually uses most if not all of its resources just trying to know which and where.
If it is still under warranty, claim for a replacement and demand that your files be recovered and transferred to your replacement/new HD.
If no longer under warranty or your files will not be recovered for you, you have to google for a freeware file recovery utility/software. The objective is for the utility program to access your external HD and copy the files inside to another HD that can accommodate your file size. it has to be another 120Gb or higher.
It is possible that you have to run your PC/Laptop in Safe Mode if it will not run in Normal Mode with the external HD attached.
