Does the vehicle have an aftermarket alarm system? Is the valet switch for this what you are looking for? If so, it depends entirely on who installed it as where they have put it, although it's usually under the dash on the drivers side. Some alarms have different sequences that you have to go through to put the alarm into valet mode, it's not usually just a switch that you flick. Best to pop into an alarm or stereo installer and see if they can spot it for you, or if the car is immobilised, find out what sort of alarm it is and call an installer for the info on the valet procedure.
Hopefully i haven't just wasted my time and yours, but i can't think of any other type of valet switch, and your description was pretty minimal.

The
2000 Dodge Intrepid is equipped with an alarm system that is triggered
when unauthorized entry is attempted. In some situations, such as having
the Intrepid valet parked or when it is being serviced by a mechanic,
the alarm system needs to be disarmed so it doesn't go off. Disarming
