I found my original instruction booklet for the New Home Knitlock Model 743 743D after being misplaced for many years. It is very old and tatty. I still have the overlocker stored somewhere as I replaced it with a new overlocker. I am hoping to sell the overlocker with instruction booklet when I get round to having the machine serviced. Please let me know if you still need a copy of the manual.
You can download most manuals, and order the rest straight from Nintendo. The downloads will by in PDF format, so you'll need Adobe Reader or an alternative (if you don't have it, chances are you'll be prompted to download it). Good luck.
Look at the diagram on the name plate. It will say 'high' and 'low' and show some numbers. The numbers are the wire numbers on the motor leads that need to be joined together for the low (120) volts.
ebay might have what you are looking for. This is the first place I'd look for parts the stopped production. Reading material will always be in ebay than the manufacturer itself. Also try this one I found http://sewingwishlist.com/help/pfaff-1469-info.html
