I've got a 2001 VW Jetta GLS with 108k miles. Recently I've noticed that the ****** isn't shifting from 2nd to 3rd but only when engine temp is below 190.

It sounds like you may have a bad synchronizer gear. Unless you know how to take down a transmission and replace it I'd visit a good reputable shop to get their opinion and estimate.
your ECM/ computer may be shot. those model sentras had campaign, where the ECM box would be lined with foam to hold the computer tight, but the fumes from the glue that Nissan used to hold the foam down, would eat the computer internally and destroy it. Nissan had us pull those foams out and discard. if you still have the foams inthere, good chances are that the ECM is fried, causing issues. Question: did you use aftermarket air filter in the air box?? or Nissan filter?? Let me know. very important to use Nissan filter it this car.
you should start by checking your brake saftey switch. you have to apply the brake when shifting from park if it is bad it will not allow you to shifft from park.try the cheapest easiest first.
I have a 2001 VW Cabrio with most of the same codes (P0411, P0103, P1225-1228, P1451, P1425 and P1472) I've read that replacing the fuel pump relay (about $4 online? http://www.jcwhitney.com/replacement-oe-replacement-fuel-pump-relay/p3068141.jcwx?TID=8000000-01VoCaRep1071035&origin=pla&JCW=1&JCW_SRC=PPC&VSID=d50606y2001j1&gclid=CIyYu5TDhrICFcV7Qgodcy8AoA ) should clear at least P1225-1228, P1425 and P1472 (just haven't tried it yet ( http://answers.yahoo.com/question/index?qid=20090114121750AAnyeAj )) I know this is an old post but hopefully someone reads this and can help, I'll be checking this page evey so often with my fingers crossed, thanks.
your shifts correctly, as your driving it downshifts and stay stuck at that gear when u stop and try to take off but intell u turn off your car and restart it it shifts correctly intell a few mins later. i am thinking that is a speed sensor (out signal problem) mounted on top of your transmission next to the battery tray, you will see couple of cable linkages next to it ...
