You can't. If the film cartridge has the DX markings then the camera will automatically set it to the correct speed. Without the DX markings the camera goes to ISO 100. You can adjust this by using exposure compensation. For example, if you have ISO 200 film loaded without the DX markings, set the exposure compensation to -1.0 and you will get the proper exposure.

Guns marked as Witte's Special were PROBABLY made by Iver Johnson, and were marketed by Witte's Hardware in St Louis. A lot of hardware store brands made exact copies of famous guns, they looked great and they fooled a lot of people. The famous Westly Richards, was W. Richards, and was about $600 cheaper. LC Smith, was AC Smith, again, fooled a lot of people, anyway, I couldn't find the date of your gun, I believe it was a .410 shotgun, and wasn't too old when your grandpa got it.
