Hoshizaki km500mae just has continuous water flow through it. The only time it shuts off is when it is harvesting ice. This water is causing a huge water bill. Any suggestions?

Have a look at the side of the evaporator; there is a probe (thermistor) attached to it that tells the control board when to initiate the harvest cycle. make sure it's clean and attached properly and doesn't need replacing. If hitting the float switch initiates the harvest cycle it sounds like you have a blocked/ scaled water tube or switch housing. take off the bottom of the switch assembly (black rubber bit) and clean through to the water chamber. run a cycle of descaler before trying again.

I have found that if the pump runs in the wash cycle but not in the ice making postion, the switch is bad. strange but I have had this happen multiple times.

Probably the suction line thermister, this sensor should signal a timer in the main control board to initiate harvest. If the thermister is OK than there may be a problem with the control board

several things cause freeze ups.
If you have water filters on the water system, be sure they are not restricting the water flow. water flow pressure should not go below 20 psi.
The bin stat may not be shutting off the unit properly. It should shut off machine within 10 seconds of ice making contact.
Make sure the float switch is not dirty. Be careful when cleaning. Fragile
Make sure water pump runs the entire time it is in the freeze cycle.
Be sure the evaps are clean. Ice cubes will hang on if not clean.
Water solenoid has a screen where the water line screws on to it. Turn off water and check screen to be sure it is clean. This can restrict water flow.
Make sure water valve closes all the way. Turn machine off and see if water is still running. Valve may be leaking water thru.
Dip switches on the board, #1 and #2. Turn them both on and it will change the defrost time to 3 minutes. If both are off, they are set on 1 minute.

are you sure this is a Hoshi and not a Cold Draft? Your model number in not in any of my manuals and the Hoshi tech site has no listing for such a machine.
Double check it.

Change the float.

Make sure nothing is inhibiting air flow. I don't think it is advisable to store food in an ice machine however that is not likely the problem unless the food itself is inhibiting air flow. Most ice machine manufacturers recommend against storing any food in an ice machine. If there is a freezer component in you model the check to see if the evaporator coils are frosting up and the frost is blocking airflow causing the ice storage chamber to get warm. High humidity can cause frosting. Leaving a door to the ice maker open too long can cause frosting. A low refrigerant charge can do this although it seems logically like it should not. With a very slightly low charge one end of the evaporator gets super cold and the other end is not cold enough. Frosts starts collecting on the super cold end and accumulates across the evaporator coil to the other end eventually blocking all air flow. With too much humidity from open doors frost accumulates over the entire evaporator evenly but still blocks. You shut the unit down. It thaws out and works OK on restart until frost again builds up. If its not a frosting problem but it just stops making ice then the ice may not be releasing. Check the water supply and change any filters to insure good water flow. A good water supply is required for proper release and harvest of the ice in many ice machines. If the ice doesn't release it takes a shut down and thaw to clear the suspended ice out. Check for these things and write back if you need further assistance and can provide me with more details.

My ice machine Hoshizaki km-500 mah is cycling to fast. Causing poor production of ice it's real small and it doesn't produce enough ice aswell. Wha seems to be the problem.
