the machine is programmed to use each colour as required
putting in black cartridges will still only use the one black cartridge
remember that grey is not less black but black with a colour mix

One can never recommend using non genuine printer ink as many are watered down and tend to splash around the printer . This can cause more problems in the long run. Pro dot is just a trade name. You can take the chance and you may be lucky. Its really a personal thing. I use Sainsbury's ink and have had no problems with it. It's up to you.

Need to print black only but low colour cartridges cause error

Most likely you cannot. If you do not have any of the colour cartridges with ink in them, the print heads will dry out and when you want to print in colour you will not be able to print in colour.

Can ip1300 print with just black ink cartridge?

AS far as I know you cannot put a black cartridge in the place of a colour cartridge it has to be a colour one. Check your printer properties to see if you can set your printer to work in black only, if you can then set it to black but leave the empty colour cartridge in place. This works for my 1800. Give it a try.

The ''odometer'' shows greyscale as colour

Any machine I'm familiar with has a default colour setting that you can set to either colour or black & White. Check in your printer properties. If the machine is set for colour, even if you are printing all black text for example, it will "make" the black from the colours, thus registering it as a colour document.

Black colour ?

Thats because it's using the other colours to mix what it thinks to be shades of grey. Due to the black ink being pigment based and the colours inks dye base, when printing onto glossy paper the machine will use the colour dye based inks to make up black. 
If you were to print on plain paper, set to greyscale, then the machine will just use the black as the pigment ink sits onto of the plain paper and will not run should the paper get wet.  With glossy paper the ink has to be absorbed into the paper ad the Black pigment ink will not do this so the machine will use the coloured inks.

Sucks but true.
