Unless you have digitizing software, I don't think "in-machine" lettering allows for more than one line at a time.

There a ton of limitation using in-machine fonts and lettering.

When the embroidery unit is on the machine the "the feed dogs are raised lower them" comes on when I go to the embroidery edit or embroidery on my lcd screen and the feed dogs are down.

The problem you've explained isn't totally clear. I'll try to give help on your problem.
On embroidery machines the feed dogs are suppose to be down while operating in the embroidery mode.
When you change programs to embroidery the sewing machine recognizes this mode and automatically makes the feed dogs go into the down position.
If you are attempting to operate embroidery and your feed dogs don't go under the plate then: Try the switch that is under the storage unit and switch it to free arm.

My babylock ellure won't work on the embroidery mode, but works on the sewing mode. I only use this machine for embroidery. When I turn it on it tells me to lift the pressor foot, which I do, but nothing...

Ours did the same thing. They said it was the circuit board for embroidery that went bad. The one for sewing is still good. They wanted $200 to $300 to replace it.

Fix button won't work in embroidery mode

Just to make sure you know what "Fix" does in Embroidery Mode - you press it before you start your embroidery then when you press Start, the machine will baste a square or rectangle the size of your embroidery before moving back to the centre ready to start the actual embroidery. It is not used to Fix stitches in embroidery mode (like it does in regular sewing mode) and it must be used before the embroidery is begun if you want the basting. Is this problem you have? It will not do the baste stitch?

Bobin winding and slow pace on project

The speed could be if the satin stiches are to wide, than the machine reduce speed to get a good result.
How is the speed of the embroidery when it does fill stitch (small stitches)?

Not shure about the bobbin winder, but to check this its nessesarry to get inside the machine.

In embroidery mode, you have to send a design to the machine before the bobbin winder will work.

Fabric doesn't Feed

I have a Janome, and when switching from embroidery back to sewing, I must touch a button that electronically moves the mode from embroidery to sewing. In some cases, I've also had to turn off the machine for a few minutes and then turn it on again.

I used to own a Viking - it had a little door covering the attachment link for the embroidery arm. If it wasn't perfectly shut, the machine wouldn't convert to sewing mode, regardless of what button I pushed.
