Assuming that the system is properly installed and was working ok before, the problem is usually a blown output amplifier in one channel and the receiver disconnects the speakers to avoid damaging them. In this case, professional repair is required.

This is because the volume knob on ANY stereo is actually an attenuator.  Meaning, the stereo would play at full blast (way too loud!) if left to it's own limits of power, so your volume knob is actually "dialing down" the power, or when fully turned up, letting it all flow.
The reason that the numbers change like that is it's showing you how much attenuation is happening in decibels, or dB, so for insTance, when it's at "-30" that's a pretty decent volume, but at "-5" it's much louder and your neighbors might complain.  I think you'll notice that it can be cranked to something like "+5" which on my AVR 100 will blow the speakers.
In other words, this is normal, so relax and enjoy the music!

According to the Harman-Kardon AVR 630 User Manual, if the 8CH mode is not available, you can try unplugging the unit from the AC wall outlet and waiting for at least three minutes. After the pause, reconnect the AC power cord and check the unit's operation. If the system still malfunctions, a system reset may clear the problem. The 8CH may not be available according to the user manual. You need to contact Harman-Kardon customer support.

Check the power button first. It is Ok ? It may require replacement.

It's in the protect mode because of a component failure inside. It needs to be repaired to get out of the protect mode.
