The engine will loose its protective film or hydrodynamic wedge resulting in metal to metal contact (connecting rod bearing failure) the oil pressure in the motor provides a film of oil that comes between metal contact points and rides on the oil not the metal this film will be compromised if contaminated with water or antifreeze.
Water mixing in the oil will cause bearings in the engine to seize up. It causes rust on parts like the crank shaft and camshaft.
It will turn into a chocolate milk kinda pasty color, it will be light brown. it will be runnier. and eventually if u keep driving it... motor will probally lock up cause its not getting the proper lubrication it needs.
