Could be a bad connect or faulty oil pressure sender unit
have the oil pressure checked by using a mechanical oil pressure gauge
that will show if it is the electrical system gauge or if you have a real problem in the lubrication system of the engine
It is best if you have the test done by an accredited service shop that has experience on your make of vehicle

loose oil pick up tube on pump
problem pump relief valve
low oil level
failing hydraulic belt / chain tensioner
