To view the stored videos on your iPod they have to be in MP4 format. You can right click the video file in iTunes and click "Convert To iPod" or something similar. The only problem with this is some file types are converted without sound. To fix this download/purchase a Mp4 video converter and convert your files then sync them using iTunes.

To STORE the video file, but not be able to watch it, go to iTunes when the iPod is connected to your computer and check the "Removable Disk" (Or something similar, seeing how the software may have updated) option and eject your iPod. Reconnect your iPod and go to "My Computer" and you should be able to access your iPod as a removable disc.

Why can I only fit 831 songs on my 8 gig iPod touch

It should store at least twice that number of songs in mp3 format, and up to 2000 in the AAC format. The best guess at this range is that there are other files taking up storage, the most likely being a few videos.

Use iTunes to check the storage usage, as described here

How do i get my ipod in disk mode

You have to first enable the function for using the iPod as a Mass Storage Device. Connect the iPod to your computer and open iTunes. When it is connected, go to the main screen for your iPod (in iTunes) and check the box that says Enable Disk Usage.
Then, you will be able to find the iPod in 'My Computer' and store files there.
