Can the car be driven normally without a thermostat? What is the purpose of the thermostat?
The thermostat regulates how fast the coolant travels through the engine. As the engine heats up it needs more coolant flow to keep cool. Removing the thermostat allows the coolant from the radiator to flow at maximum and will in most circumstances cause the engine to be over cooled. This will result in higher fuel consumption, imcreased engine wear and ineffective heater operation. Lastly just removing the thermostat can in some engines cause the coolant to flow differently through the block where hot spots could occur and cause damage to the engine.
Yes. You the car can drive as usual without thermostat but it will cause high fuel consumption.
Because when engine in cool temperature it will in rich mode (more fuel) to heat up. If without thermostat to cruising in highway the car will become high fuel consumption.

is the fan working? if the fan isnt working it will overheat when idling, as it wont be sucking cold air through the radiator. a quick way to diagnose that your cooling system is fine is when stuck in traffic, turn your heaters onto hot, if the engine temp gauge shows that the engine is cooling down, the cooling system will be fine 9/10 times.

I suspect you are right with the thermostat angle.
The new thermostats are the opposite to the old ones that used to cook the motor when they failed.
The new ones run too cold in case of failure and also up the fuel consumption because the computer gives a cold motor more fuel than a hot one.

It could be a couple of things. I first guess is to check the fuel filter. If it has not been changed out within 15-25,000 miles deposits that within the gas tank has restricted the flow and will cause a hesitation or very rough idle. Now the desposit could have surface close to the injectors restricting the flow. Second, tune-up ( distributor cap and button, spark plugs, wires, etc). Third, check all you fuel hoses leading (especially leading from the fuel filter) to and from the engine.If they have never been changed, I would do so. Hope this a start of resolving your problem.
