I can almost 100% be sure that your head gaskets are gone. I worked at a Caddy dealer and when this happens then the gaskets are gone. If it was a t-stat the car would not over heat. You think t-stat will cause an over heat problem. The northstar engine has programing to prevent this from happing using fuel to cool the cylinders as the engine runs in the non firing cylinder.

It made the noise when I put water into the antifreeze area.
This engine (4.5 V8) can not be overheated like this, it ruins the engine.
if it is running that hot the head gaskets are toast.
