Those thermostat bulbs are the thermostat and hi-limit bulbs. They need to be secured to the fryer. The hi limit is tripping out because its sensing that the oil is too hot.Even though the oil isnt that hot the hi limit thinks it is.

This button should be a high limit switch. If it is a small red button mounted to a 2" x 2" or so device. You most likley have an issue with the thermostat letting it over heat. The best thing to do would be to replace both the thermostat and the high limit for safety reasons.

clean pilot light first , you may need to change thermopile or thermocouple see what mille volts you get from thermopile need 600mille volts
