Hi tee1134400...
Check all your connections going to the heating element...sometimes they will get corrosion on them and cause them not to function properly.

Wood chips won't advance

You said, "wood chips won't advance." That may be the problem, the Bradley Smoker doesn't use wood chips. It uses a manufactured wood chip biscuit, that looks like a small hockey puck. These will feed automatically when the smoker calls for them. Loose wood chips won't.

We have mislaid operating instructions. How do you work it?

This link should help you get a new set of operation manuals.
http://www.brinkmann.net/products/details.aspx?item=810-5301-C

The basics of this unit is, load up the charcoal pan, fill the water tray up about 2/3 full, have some wood chips soaking overnight, pick your favorite recipe for a smoker (try smoker burgers!) umm and easy for the first try.

Get your charcoal going assuming not the electric model, place the meat on the grills, close lid, try to maintain about 225 temps, add your soaked chips on top of the coals, check you temps, add more charcoal when the temps start to drop on long cooks. You should be able to smoke some burgers in about an hour and a half. Low temps and slow cooking is the key.

I hope I have helped you out.

First smoker

I assume raw salmon? If so I usually smoke it for about an hour at 225 or to 140 internal temp. I would also lay the salmon in a foil tray with some lemon and butter. Do not drown it just enough to keep it moist.

We have a GE gas oven/stove top and the stove top is lighting as well as the broiler but we can not get the oven to heat up. What do you suggest we try?

i just moved and our stove in the new place doesnt bake things right. it seems that the top coil doesnt come on. its very difficult to bake anything. seems to come up to temp for pre heating, but only the bottom coil comes on. If you put it on broil, then the top coil gets hot. that works fine. tired of burning pizzas and biscuits. can anyone help with a cheap fix? dont have alot of cash.

Temperature in oven is way off

Jim,
A couple of questions... What makes you think the oven is off that far? If you have a set on the shelf dial type thermometer, throw it away. They are never accurate and generally read 50+ degree too low. I recommend the "biscuit test". Which is simply a cheap can of "hit on the edge of a counter top to open" biscuits and see how they bake with the instructions on the can. Make sure you allow the oven to preheat for 20-30 minutes (always but especially for this test).
To change the oven setting press BAKE, then run the temp up to 550 then immediately press and hold the bake pad for 10-20 seconds. The display should read 0 (zero) you can then use the up down arrow pads to adjust, hit bake pad again and then "clear" when done to lock it in but, you can only go up or down 35 degrees. If it is truly off by more than that you would need to change the main oven control board and oven sensor.

Biscuit advance

contact the company to see if the timer unit can be purchsed to replace yourself or if the whole drive has to be replaced. not sure if its battery operated, but if it is , to make do for now you can start everything up , pop out the battery and pop it back in as you need to.....lot of work but you'll be smokin' at least.........

Broiler element

Its an on or off thing. No way to control the flow of electricity.

The elements are bigger than necessary to heat the unit quickly, the problem you have is a bad thing with food that burns easily but a good thing that makes these units come up to temp so quickly after turning on.

Unfortunately the only thing you can do is put more space between the element and your food or use aluminum foil (not suggested, its too close to the burners).

Eventually the contacks will fail (unless you are one of the lucky ones).

Good Luck
