I have a Maytag Microwave model #MMV5207BAS that will not heat. Displays 8s filled with Xs in the digital display a second or two after you try to start the cooking cycle.

Failure of the magnetron - the part that generates the microwaves that do the heating.
Since the magnetron needs more than 5kv to function the repair can and must be done only by experienced personnel using very special high tension resistant tools , otherwise even the smallest touch with regular tools would mean death for the unlucky person.
Because of that the repair will be expensive, over $200 ($120 for a new magnetron and at least $75 for an hour's work) . In my opinion it's simply not worth repairing it - for $250 you could buy a brand new one.

It literally could be anything. The only thing you can try is a power cycle or check the back for a fuse holder near the mains lead.

You can probably buy a new one cheaper then fixing the old one

Most controls that display 888 something is shorted out on the controller.

H95, H97, H98 or H99 mean that there's a problem with your inverter, magnetron, or digital programming circuit.

Due to the lethal voltages used and produced, I do not recommend that an inexperienced person work on these.

I have a Maytag MMV5207BAS. When pulling door open it would start itself. Had a tech come out and try to fix door latch and made it worse. Now it starts upon closing and starts on and off by itself

Is there no way this product can't be returned, there should be warranty on the item if new, regardless if it was manufactured in 2007 he has to honour the warranty. The problem you are describing is caused by one or two defective door switches, that must be replaced in order to get it working, and you need a professional that can do the job right.

I have a Maytag microwave, model# MMV5165BA and it has no heat.Everything displays and vent works but no heat.Can you suggest anything before I toss it out?

If it operates as normal but items don't seem to get hot it probably is a Magnatron failure (microwave producer). More times than not the repair / replacement of a Magnatron these days is not worth the investment, especially if the microwave is 4 years old or older ! You should be able to replace your microwave with a similar featured microwave / hood for about $300 to $400. You might try a JVM1750DMWW by GE great micro/hood for about $300, includes one touch sensor cook capabilities,300 CFM vent fan,removable rack,option to turn the turntable on or off, 1000 watts of cooking power. Good luck !

Microwave heated food an hour ago but has stopped heating it now. Sensor cooking ceases and displays "F3H". Fan has stopped working also.

A make and model would have been nice, but try unplugging it from the wall outlet for 15 minutes.
