Most of the time it will restart after a min or 2, but has left me stranded for several hrs. runs fine, then without warning stops as if the key was turned off.

I HAVE SAME ISSUE WITH A 96 DODGE DAKOTA, I CHANGE ALL THE SENSOR S AND STILL DOES IT,
THE TWO THINGS THAT WILL CAUSE THE ISSUE " AFTER A LOT OF RESEARCH "
IS A DYING FUEL PUMP OR YOUR COMPUTER, THERE IS A BAD PROCCESOR " CHIP ".
MINE IS THE COMPUTER, SO WHEN IT'S STARTS ACTING OUT I WILL DISCONNECT THE COMPUTER FOR 15 SEC. AND THEN CONECT IT BACK AND PROBLEM WILL BE GONE FOR A MONTH OR TWO.
I had a similar problem with my 99 Cherokee, it would start and then would not idol without holding down the gas, after it warmed up it would run fine for the most part it would sometimes die at a stop light or sign. I was told to replace the blower motor for the carburetor, works great and gas mileage improved.

unplugging the computer wasn't enough. Ended up replacing it. Ouch! But it's back to running great. Thanx for the tip. It was right on the nose.

My 99 wrangler does the same. Only thing sometimes when it starts back up the key light comes on and stays on when it running. I was told its the transponder in the key or receiver. I going to take it in to get new keys programed. Was this mentioned prior to checking the computer?
I have already changed the key cylinder (mine was bad ). I also changed the ignition switch and it still has the problem
it dies with no warning : Mechanic changes the fuse and the fuel pump ; and steel do the same . the fuse at fuel pump blowsout
