Oil pump was replced with high volume pump, now the oil pressure wont go over 40 and at idle it goes to about 5
Are you sure the gauge is reading correct? You also didn't mention how many miles the vehicle has. If it's less than 150k I would doubt the motor it worn out, (excessive bearing clearance would cause poor oil pressure even with high volume pump). Chevy's have a lot of issues in the dash with the motors that make the individual gauges work. I would check the oil pressure with a manual gauge. If you don't have the skills to do this yourself, a qualified shop wouldn't charge much to do it. If you find that the gauge is incorrect, there is a guy in MN that rebuilds the instrument cluster for $65 with all new stepper motors (the motors that work the gauges) and replacement of all the bulbs, plus gives it a lifetime guarantee. www.speedometerrepairguy.com.
OK, let me start over, the engine was rebuilt and all the internal parts were replace. the sending unit was replaced first.
I would start by checking it with a manual gauge to be sure the gauge on the dash is correct. The pressures you listed are what a worn out motor would probably register, and I would think on a fresh rebuild and a high volume pump they would be much higher. Good luck!

Looking at GM SERVICE MANUAL oil pressure should be 18 psi.@ 2000 rpm.best to buy stock oil pump.

Depending on the amount of miles, maintenance records, or how hard the car has been driven either by a previous owner, or by yourself. The engine's main crankshaft bearings or the connecting-rod bearings could be excessively worn.
Also, it could very well be a wiring problem to the sensor and/or computer causing the problem.

The pressure to be most concerned with is the reading in gear at idle with engine warmed up...Low end really should not be below 20. If pressure wanders, change the sending unit and check actual pressure with a mechanical gauge if necessary. The age and quality of your oil, as well as temperature all play a part in pressure, as well as internal wear from time & miles of use. If pressure changes with rpm, that is normal. 40psi is good while driving.

maybe a dumb question, but have you checked the engine oil level (not trying to be rude) . if you have check the type of oil filter you are putting on. But you mention tapping noises....do they increase slightly as engine rpm increases then dissapear. if so, i would wager that the noise you are hearing would be the hydraulic lifters. the reason you hear them is that they are not getting a sufficient amount of oil pressure...your oil pump might be dead or dying...would go that route.
also, ensure that you are using the correct weight of oil in your vehicle (follow manufactures recommendations)

You may not have put the right amount of oil in your car, your oil pressure sensor could be faulty, or you may have a leak.
By revving your engine, you're increasing the pressure and thus turning off the light and making the sensor think that it's at the correct pressure.
