It's possible there's a cam that adjusts the idle, that should increase the idle speed on some carburetors during colder engine temp. They sometimes need to have the throttle depressed one time to relieve the pressure and allow the cam to rotate. If a quick tap/release of the pedal raises the idle speed, that's pretty standard.
If the check engine lite is on, check for applicable trouble codes. Around here some of the national brand autostores will check some codes for free. How long since a tune-up?
The basics for a rough idle, is to check for a leak of some kind, fuel--egr--vacuum, something of that nature.
If a temp issue, check coolant temp sensor.

What is the system charging voltage? An over voltage condition could cause this. Why not just hook up an after market gauge? The factory gauge is junk and as cheap as they could make it. And yes I have owned Vett's.
that is a 12vdc power problem. the sensors are failing , many do to lost power. (12vdc electrical distribution power) so use a voltemeter, i bet even at he cig lighter port the voltage drops below 13.3v running, way below. infact. are your battery terminals clean, is the rested voltage at the battery terms 12.6v (keys in pocket) no? then the battery is being discharged,
oil pressure is going to increase with higher RPM's ,at an idle it should be around 20psi,at running speed the oil pump is pumping faster and it could clime to 60 psi. water temp though you should check coolant level or think about a new thermostat
