Tappets clearance on Mazda B25 please?

I'm assuming you mean the B2500? The clearance normally adjusts itself hydraulically. If your just checking the clearance it should be no more than 0.15 mm {0.0059 in} on a Cold engine.

How do I set tappets of a 2.5 diesel turbo mazda

you haven't mentioned if it is a 4 cyl or not. However bring no 1 cylinder up to tdc and watch the tappets of the next cylinder to fire. when that cylinders rockers are in valve overlap situation ( exhaust starting to close and inlet starting to open) then that will be maximum clearance on no 1 cylinder and is when you set the tappets turning the engine until the next cylinder is at TDC watch for the next cylinder again to be in valve overlap and repeat as for no 1 cylinder
