If I understand your situation, you are saying the engine was run with one quart and you added 2 more quarts of oil. Now you have 3 quarts which is less than what it takes to make it full. On some engines it takes 5 quarts of oil. You will have to check the dipstick to see where you are now compared to the full mark.
If it is still less than full, it may cause some noise, but depending on how long you ran it with the oil low, how hot it got and other unknowns, you may have a serious problem. Try adding oil to the fill mark and pray that after you run it awhile the noise will go away. The noise may be the lifters trying to work with little or no pressure. It is possible that after the oil top off and a bit of driving they may pressure up and start working again.
Generally if it's less than a quart overfull, nothing will happen. Since you are consuming a lot of oil, the level will drop with time. If more than a quart, remove the oil filter and drain it (may take a couple of times, starting the engine each time to re-fill the filter) or simply drain the oil from the engine into a clean pan and use that oil to re-fill but not as full as before. Having too much oil in the pan can cause the crankshaft to froth up the oil like it's in a blender which causes air to get into the oil (air does not lubricate anything) That, can damage the bearings on the crank.
Sounds like you may possibly have a broken transmission mount or engine mount..HAVE THEM CHECKED IMMEDIATELY before something worse happens to your truck
