The most common adjustment would be to adjust your idle mixture screw. These guys make the job very easy with a thumbscrew to do the job. yes start with the manual, have a good lift for the bike and then be prepared to disassemble the rear tire, and complete swing arm out of the bike to change the belt. This is no job for a beginner!

make sure linkage is adjusted correctly. dry lube the levers moving part

SOURCE: What oil do i run in my yamaha roadstar silverado

Any oil that is JASO MA certified motorcycle oil. 10w-40 for cold climate. 20w-50 for warm climate/touring. Car oils use different additives. Do not use any oil that says Energy Conserving on the label . It will shorten the life of your wet clutch and transmission gears. If you use Synthetic oils, they will help your bike run cooler and shift easier.

Sounds like your carbs are clogged, leaving choke wide open or staying on throttle to force running conditions merely tries to bypass the pilot jets but ultimately the carb needs to be thoroughly cleaned and if the gas is pretty bad you will need to flush your fuel tank out as well.

Are you saying your motorcycle will not run unless the engine is NOT CHOKED?

That is how it is suppose to run. Choke only when needed in cold weather.
