Head gaskets usually don't just go bad on Toyotas. Find and correct the cause. While you're at the parts store buying the gaskets, pick up a manual for the Celica. It's great to have the illustrations when setting the timing etc.
Yes. It's a real pain in the ***. You're going to have to remove the intercooler from the top of the engine. Just be glad it's an air-to-air intercooler, not an air-to-water "charge cooler" like mine. Once it's off (pour some gas in it and swill it around to give it a bit of a clean), you can start getting the bolts out to get the head off. Take the spark plugs out first. I don't *think* you need to remove the inlet manifold on this car.

it is easy, you remove the center Diff in the transmission and you weld it then reinstall it, and remove the front CV shaft and you know have a RWD celica
