Sounds like you are getting a blank space italicized at the end of the word you are putting in Italics. When you continue typing, you are starting at that space so the text continues in Italics.
Options to avoid this are:
Type the entire email, then go back, highlight the word you want in Italics, once highlighted, press CNTL+I and that one word will be in italics.
or
After changing to Italics on the word, press the END key, then turn off italics, this should have you at the end of the text regarless of spaces you can't see, and have you back to the default text.
Personally, I Italicize, Bold and Underline after I have finished typing by the 1st method. =)
