The "Eco" light keeps flashing when I turn on my Vulcan Global 300 dishwasher and the drain pump keeps operating

To resolve this issue you’ll have to remove the bottom panel that is under the door where you’ll find micro switch, on this micro-switch there is a small cup which need to be cleaned and then dry out the micro switch with the help of hair dryer.
