How do I reheat mushroom ravioli?

There is only one way to reheat any food and that is thoroughly!

Some foods are improved by standing and reheating and some foods become a little overcooked.
The traditional oven reheating does rather tend to dry the food unless it is something like a casserole or it is firmly covered and oven reheating can take quite a time.

Reheating with steam prevents food drying and there is something to be said for the old-fashioned covered plate over a pan of water boiling on the hob.
Reheating in the super-heated steam of a pressure cooker is suitable for some foods.

The most convenient method for most modern people is to cover the food with all-purpose cling film and give it a couple of minutes on full power in the microwave, allow it to stand for a couple of minutes and then give it a couple of more minutes, removing the cling film for the last minute or half minute by which time the food should be piping hot and making simmering noises and most importantly the plate should be completely hot underneath with no cold spots. Any ideas for pasta sauces other than tomato. I am getting so bored of making my kids the same type of pasta dishes every night.

The Guardian newspaper had a good article that gave 10 suggestions for alternative sauces, such as creme fraiche with ham or leeks.

Enjoy

Does it matter if I use dried or fresh pasta?

That depends who you ask. Any real cooks or probably all Italians will tell you that fresh pasta just tastes so much better than dried pasta, but if you are short on time and need to create a dish in minutes, you should go for dried pasta without feeling guilty and save the fresh pasta making for when you have time.

Can diabetics eat pasta? I have a friend coming over who is diabetic and I wanted to make pasta for dinner.

Pasta is a food that is high in carbohydrates, so diabetics can eat pasta but would have to just keep an eye on portion size. If you want to reduce the carb level of your pasta dish, you should use whole wheat pasta that is rich in fiber and slows the digestion of carbs down so sugar levels don't rise as quickly.
