I dont know if any tankless that have that installed.
Because as soon as it detects water movement it starts heating and if you continuous movement it will heat all the time. If that happens then something is going give and it wont be pretty. With a tank type water heater it just recirculates back to the tank and get reheated as needed.

Have gas storage Rheem hot water system, pressure in hot water taps is low

hot water pressure is equal to cold water inlet pressure
check for tap restriction, hot water section free of air , ( release the pressure valve ;lever to fill and bleed out air)
if you have a hot/cold mixer at the hot water system, they can fail and block of the hot water flow
(That unit has to be fitted by law on heater installation)
have it tested first as they cost in excess of $15.00 aud to replace

Why does it take two bowls of water before water gets hot

How quickly the water coming out of any specific faucet "gets hot" is most often a function of the distance from the water heater. A faucet that is a significant distance from the water heater must first allow all the cool/cold water in the lines to flow through before the hot water will begin to flow from the faucet. The wait can be solved to some degree with a continuous flow pump, but this uses (wastes) lots of energy. Installation of a tankless heater in close proximity to the faucet can also solve the "problem". Be sure its is capable of raising the water temp at the flow rate as you require.

Hi Installed incorectly...You have gravity by-passing (flow) into the cold water pipe.Maybe have a check valve installed to stop flow during stand-by time. thanks

List of causes MIGHT include one of following:
Bad household circuit breaker that powers electronics, or loose wire inside outlet where tankless plugs in.
Tankless fuses and control board.
Water flow rate too low. Minimum .8 gallon required (depending on model)
Tankless inlet filter clogged.
Household aerators clogged at faucets.
Crossover at single-handled faucet
If installed, there can be crossover at mixing valve.
Faulty household check valve, including check valve on re-circulation system if that system is installed.
Restriction in household water line, such as clog at elbow.
Unequal pressure in household hot and cold lines, caused by restriction in hot line. When single-handled faucet turns on, the cold water pressure is higher so hot does not flow and tankless will not turn on.
Loose wire connection inside tankless.
Unit temperature set too high.
Unit temperature set too low.
Water temperature is very hot coming out of tap, so more cold is added, but that reduces amount of hot water flow, so tankless turns off because flow rate is too low.
On some tankless, if water is preheated by solar or other indirect source, the burner will not activate.

Water temp. at the tap fluctuates

It is likely the inlet filter is plugged. this reduces the flow and then the heater adjusts the burn rate down to protect itself. the filter screens are small and plug easily. It would be a good idea to install a larger pre filter on these heaters.

We have a customer that has a 751od who says at times thier water gets cold for a few seconds. No error codes on the remote. They claim it does it at different fixtures. Everything checks out from water...

A few things you should check:

1. Cross Connections - this occurs when cold water leaks into the hot water system through a fixture. In order to check for a cross connection: 1) turn off the cold water to the tankless 2) open up hot water fixtures in the home. The water should shut off at all hot water fixtures; if there is a continuous flow of cold water, then you have a cross connection. The most common place to find a cross connection is on old shower cartridges.

2. Ask the customer to check to see if the burner indicator is continuously lit during operation.

3. When the water goes cold at one fixture, try another near by fixture to confirm it is also cold there. If its hot at one fixture but not the other, then you have some issue with you plumbing. Tankless heaters can't pick and choose which fixtures to deliver hot water to.

4. Tankless water heaters all have a minimum flow rate that must be maintained in order to continually fire (.5 gpm for Noritz). Ensure their hot water fixtures flow at least this amount, or that the customer isn't mixing too little hot water at their fixture.

5. If they see the cold spurt during initial firing, they may be experiencing a cold water sandwich. When the heater moves from a standing state to a firing state it takes a short period to ignite and heat water. During this time it will be passing cold water through the system. Usually this cold water mixes with hot water in the line as it travels through the plumbing system, but if their fixture is very close to the heater, there won't be enough time to mix.

6. If debris has gotten into the flow sensor, this can prevent the unit from registering flow and cause intermittent firing.
