Yes you can bypass the ac compressor with a shorter belt, however it may take a few tries to get the right length belt. Even if they have a belt for a non ac Jetta, the belt sometimes isn't the right length.

check your grounds the wires are all colored brown

check high pressure with a proper machine and see how many bar you have ,think compressor may be on the way out .

These cars usually have disk brakes in the back. You need a caliper piston rotator tool, this tool fits into the caliper piston and you must turn it in to retract the piston, it fits onto a 3/8 " drive socket wrench. Npa sell a universal one for like $15.00 - $20.00.

Yes you can get a shorter belt and bypass the ac. It may be as simple as going to the parts store and tell them you have 2001 jetta no ac. Just keep the receipt.
You should also disconnect the a/c compressor connectors/wires/plugs also, try doing this before you bypass the ac first incase doing so gives you warning lights on the dash board.
Also know that the defrost setting uses the a/c so it will take longer to get the condensation off the inside of the window.
