My 2000 stratus fans run non stop so I have no heat. New rad, new termostate. What else could it be.

Even if the radiator fans run all the time, you would still have heat in the car. The thermostat prevents the engine coolant from flowing thru the radiator until it opens.
Could have low coolant and air pockets in the system.

My car is overheating. What is going on

Have you checked the thermostat? Run the car until the gauge shows normal temp and carefully check the upper radiator hose. If it isnt hot and if you can easily squeeze it the thermostat isnt opening to let water flow to the radiator. If it's opening, check to see if the fan is coming on. If that's not running, check the voltage at the fan, then the fan relay. If you aren't getting power at either of those places it could be your temp sensor.

1997 Grand Am overheated. Fan, temperature gauge changed. Head gasket replaced. Car was running fine, couple days later, acted like it wanted to overheat, why does it keep doing this?

I think you need to clean your radiator(open water tank and remove all dirt inside it and inter in water hols and pipe thin stick), change thermostat to lower degree heat, if the problem continue try to remove thermostat.

if you unlplugged the temp sensor so the fans will run the cars computer cant read engine temp and will call for to much fuel which will run good when cold but bad when warmed up

Radiator fan runs too much

You more than likely installed a high temp thermostat, which takes more heat to open than the factory one.
One way to solve this is to install a lower temp thermostat. Or you could try another temperature sending unit, That should run your fan like normal again. But if it doesn't try to swap your fan relay out.

The most common overlook thing is you got a air pocket, so before you go spend your money turn Heather on full blast, open the radiator cap, car running look for air bubbles, takes patience cause you got to wait for the thermostat to open up, you must refill the coolant really really slow snail pace, some car have a bleeding valve others have two chamber on the overflow bottle,good luck, if that doesn't work change the thermostat first and if that doesn't work I'm afraid you may need to replace water pump. . water pump

First check your thermostat. The easy way to do it is take it out and drive without it for a while. If it stops overheating, put a new one in before the weather gets cold. The thermostat lets the engine heat up to a certain temp before opening and letting the coolant through. What your thing actually sounds like is that the electric cooling fan isn't working. Without airflow through the radiator your car will get hot. That's what the fan does, it puts air through the radiator when your car isn't moving. Check your fuses, it could be a really simple fix. Then check the fan switch in the coolant system and the fan motor itself. If those don't do it, it's probably the water pump. Good luck.
