I have had the same problem and have a Dodge Dakota as well, the fix is very simple. Here is the cause, the automatic idle speed control valve gets sticky from fuel vapor backwash from the intake, this inhibits its ability to react quickly to changes in load on the engine (cold weather makes it worse) such as putting the truck in gear or turning on the AC. To clean the intake throttle valve and the idle speed control valve (called the IAC) do the following procedure, make sure you follow the steps exactly to get the problem fixed, then do it once a year from then on.
To correct this problem get a can of throttle valve cleaner (it is made by CRC) from the local auto parts store, spray it into the air intake through the throttle body of the engine until you have used about half the can, you will need to hold the idle up while you do this, it will try to stall, after this shut the engine down and disconnect the Negative (-) battery cable for 5 minutes, restart the engine and blow the gunk out by revving up the engine several times. The intake is now clean.
Thanks a ton for he advice on this. I cleaned it out last night and no problems this morning. It actually stopped sputtering at red lights as well and seemed to drive better. I'll update in a week or two as unplugging the negative usually helps for about a week but I think this was a good fix as it is driving much better. Thanks again!

Sorry, my first time on here. My 2000 Dodge Dakota stalls when it get's to be under 50 degrees overnight. it happened last year around this same time and lasted until I put a new TPS in it. It was fine the rest of the winter. Now it's winter again in Arizona, the weather fell below 50 degrees and it stalled out again. It happens when I put it in reverse and drive. Once I get going if I keep it in 2nd gear it works fine. The rpm's in drive and reverse seem to be low. Also, if I unplug the battery terminals then reconnect them it seems to solve the problem for a few weeks.
Please give detail's of when exactly it stalls out?? Driving down the road, at or near idle, cols engine warm? Hot engine?
It turns over fine when I start it. It stalls when I put it in reverse or drive. The idle usually goes down to 400 or 300 as soon as I put it in drive or reverse. If I put it in 1st or 2nd it idles betwen 700 and 1000 and drives fine. It only happens when it is below 50 degrees outside. If I take off the negative connector from the battery and turn the key for 30 seconds (reset the computer I guess?) it will go into reverse or drive and idle correctly for about a week at any outdoor temperature. The engine doesn't seem to be running hot (no guages come on)
