I keep getting Roxio Easy VHS to DVD trying to install....I've tried for 3 days but it just won't go away. What do I do to stop this ****?

Most likely a driver issue. Check the website for the VHS to DVD software for the compatible software/driver for your OS.

do a system restore back to before you installed the software, then reinstall the software.
At the very least, do a system restore to yesterday.

based on what you have said, you have installed and reinstalled the software for several times and still does not work. What you can do is to prepare your computer first on installing the software and completely remove the software first before installing it. Remove any older versions of Roxio or Sonic from the computer and do a clean install (uninstall then reinstall).

Do you have any other conflicting software or any other Roxio software? Any other Roxio or Sonic software will cause errors with Easy VHS to DVD.

It's also recommended to download the Service Pack from the Roxio.com site.
