The sensor in the coolant resivor may need to be replaced. You may want to take a look at it as this could cause this type of situation.
If you need to buy a new sensor, here's a link to them.
Pontiac Grand Prix Coolant Level Sensor

1997 Grand Prix GT no spark to fuel injectors and no check engine light. Took all codes off with decoder machine. Replaced fuel pump and Fuel pump relay still wont start.
SOURCE: Low coolant light flashes continually/coolant
if it is NOT low, and the car is NOT running hot, the problem is in the sender unit in the surge tank, located at the bottom of the unit-it does go bad, and the only solution is to replace the surge tank (they did not design them to be removed from the tanks)-be certain it is not low, though before you do this-unplug the sender unit and install a resistor (2200 ohm from Radio Shack, about 20 cents)-between the wires from the disconnected connector-no more dash light, but now you will not have an 'idiot' light for you tank should it run low, so you will need to check it.
