I also have this game and I had the same problem, but I fixed it very quickly. I needed two solutions, and here they are.
Solution 1: Go to XBOX Live and update your console or the game, if a patch is available. There was for me.
Solution 2: Go to your Console Settings and clear the cache. Believe it or not, this can have a significant impact on performance, even for such a powerful gaming platform.
If neither of these two solutions work, try cleaning your disc reader, or if the problem can't be solved that way, contact Microsoft and they should be able to either replace the console or fix it, provided that it's under warranty. Good luck!
Unfortunately this is main problem of the SDTV - low resolution (believe me
or not but I couldn't see where enemy missiles were coming from when I played on
my TV). So I switched to my LCD monitor (maybe 17" is a bit small but at least
it's 1280x1024).
