Oven trays/shelves will not stop

I have a 3 year old Baxter OV851G-18 revolving 18 pan gas oven.
#1 - The oven trays/shelves will not stop. We have to hold the emergency stop to keep the shelf stopped. Also the auto and reverse buttons are not operating. (Seems related.)
#2 - In the morning when we first turn on our oven the purge doesn't seem to have enough power. We have to hold the emergency stop for the first 5 minutes to get the oven to purge. (This problem started at the same time as #1 above.)

Also have the same Baxter oven but about 15+ years old. Not sure of the model number. This one has a built-in exhaust system.
#1 - The exhaust system is not functioning. Making lots of noise.
It was suggested that we replace everything in the exhaust system except the housing. (on/off toggle switch, fan motor, blower wheel, bearings, shaft & belt.) Do you agree?

For any of these items are there refurbished parts available?
Are there companies that would refurbish the purge motor if needed on the newer oven or the exhaust fan motor on the older oven?
Do you have a recommendation for a service provider in the Philly area?

Thank you!

Thanks for the reply. I tried all three links. They seem to point to residential contractors rather than commercial. This is for a large commercial oven. Do you have any suggestions for commercial oven repair.

Second, I called Baxter direct in Philly and they are very expensive. You said that there are used parts available. Can you direct me to a place to find and order used/refurbished parts for Baxter ovens?

    Thank you.

I HAVE A BAXTER DOUBLE RACK OVEN OV500G2 EE. WHEN IT GETS UP TO TEMPerATURE THE BURNER GOES OFF, BUT THE TEMPerATURE KEEPS RISING . IT CAN GO HAS HIGH AS 50 TO 60 DEGREeS HIGH AND SOMETIMES HIGHER.

Question edited for dreadful spelling.
Please don't type in all CAPS, it is considered SHOUTING and very RUDE, plus it is harder to read.

This is a commercial machine, all repairs are tax deductible. Call for service, it needs a new thermistor, (the temperature sensor). It is also gas, so it has to be repaired by a registered gas technician.

Baxter revolving tray oven chain questions. I have a few questions below. Thank You

Slack is necessary to prevent early failure of the bearings on the wheels. It is also necessary for proper operation when the oven heats up. slack shouldn't be too much or the chain may fall off the teeth. Too tight and you have wear. The abrupt stopping indicates the need for lubrication of the motor.

Pilot light either won't light or won't stay on

Check for a draft first that is randomly blowing this thing out and second check the gas regulator.

Wich is the power supply 120v, 208 1 phasse or 208v 3 phase.

Most Baxter BXA ovens have separate power supplies, usually 120v for the controls and lights, a 120v output on a circuit breaker for the roof fan, and a 208VAC 3 phase supply for your convection motor. Older Baxter ovens may have a 3 phase service disconnect inside the electrical/burner compartment, if I recall correctly the BXA models do not and the only way to shut it off is via the 3 pole breaker at the service panel.

I have a Baxter oven OV210G, When the door is open the rack will not stop or lower. The micro switches all work and relays seem to work but I can't find the MR3 cantactor and don't if that is the problem...

When you open the door check to see if your burner and circulation fan remain on, if they do you have an issue with your door switch.
Also if your rotation micro-switch was bad you would get a buzzer every 1 second because the oven would think the carrier isn't rotating.
It's hard to troubleshoot beyond that without seeing the oven, its possible you could have a bad relay on your control board. In this case I would call an authorized service provider to have to check the oven out.

Uneven cooking. how to adjust vents

Bend fins outwards to decrease airflow towards center of oven, bend fins inwards to increase airflow towards center of oven. Open gaps to increase airflow to an entire tray, close gaps to reduce airflow to an entire tray.
Only make small adjustments, trial and error may be required.

Oven with an attitude

Check the lineator actuator motor. If you remove the top cover there should be a strip of metal stuck on the cover to put pressure on the gear to keep it from free wheeling down. These is a tiny button/nipple that sits in the hole in the top of the gear shaft. Lose it and you're sunk. Work with good light and watch the grease. Good luck
