You shouldn't need to delete all files. Your profile and savegames are different. You can just delete your profile from System/Storage and remember NOT to choose "Delete profile and items". If you're getting a corrupt profile and you're using a memory stick to save, it's a good idea to get into the habit of exiting any game and signing out before you switch off the console.
It has become corrupted because you or someone else has removed the hard drive whilst the machine was on, or when saving the data it saved it to a corrupted part of the hard drive
Yes, if you lost your profile, and it was registered with XBOX LIVE, you can sign into Xbox Live, go to the dashboard, and in the dashboard there is an option called "Recover Gamertag" which you can click on to download your profile back to your Xbox.

There are a few things I can think of that may be causing the problems...
1: The data on your hard drive has been corrupt some way. (Usually happens if you touch the hard drive's plug in with your fingers or a piece of metal) you will have to buy a new hard drive (recommend a 1st party one to save you time and stress)
2: Your using a 3rd party unauthorized hard drive and after the february or november update (can't quite remember) all unauthorized memory units are automatically locked and all data in that memory unit becomes corrupt and unable to read just about all data on it... (Just buy a 1st party as it will save you time and stress)
3: You have been banned from xbox live... When you get banned microsoft locks your hard drive just like explanation 2 EXCEPT this effects 1st party hard drives aswell... I'm not quite sure about this but I think it also locks out any hard drive/memory card you put in it ever again... If youve been banned then I would recommend either buying and elite (for the 120gb hard drive, headset, live bundle) or a pro.
Over all I'm 99% sure that you can't salvage your game data... sorry.
If the game data are corrupted there's no way you can't return it back. The only way is to buy/download it again or if the game profile is the only one corrupted. Just make a new profile.
sorry bro.. but the only way for you to retrieve your gamer profile is to delete the profile and then log in online... your gamer profile will be retrieved, all achievements will be restored but save games and game data will be lost... you can try to contact microsoft for further troubleshooting...

Just delete your old profile and recover your gamer tag. your Gamerscore and Achievements are stored on the Xbox Live Servers so you won't lose those. but you might have problems with your saved games
