This video will probably be handy, although not quite your model, it should be very close. Generally, your machine should be able to do straight & zig-zag stitch without cams. Cams were usually for decorative stitches.
A sewing machine technician may be able to help determine who actually made the machine. The problem is, Sears negotiated with various companies to make Kenmore products and Sears frequently changed manufacturers. I believe Janome made some Kenmore sewing machines but during what period and for how long is questionable.

No, bobbins aren't really interchangeable, even if they fit. For example, I have a Kenmore 385 Elite and a Brother SX-8060. One (the Kenmore) uses bobbins with a curved top and bottom. The Brother uses bobbins that are flat on top and bottom. Either bobbin fits in either machine. But if I use a curved top and bottom in the Brother, it clicks and clacks and has a greater tendency to jam than the flat bobbins. Likewise, the Kenmore is just happier with its curved bobbins.
