you cant you have to reset the whole thing

For unlock instructions, click on the Apple help site:
Forgot passcode for your iPhone iPad or iPod touch or your device is...

First, you can try the default passcode: 0000 or 1234
If that didn't work, please read my tip on how you can bypass the passcode-lock and continue on restoring your device thru iTunes.

Follow these steps:

1. Plug/connect your device to a computer (PC or Mac)
2. Turn it OFF
3. Press and hold the POWER and HOME buttons together for EXACTLY 10seconds
4. Release the POWER button but keep holding the HOME button until the computer beeps indicating that a USB device is recognized.
5. Open iTunes and restore your device.

Warning: Restoring will delete all data on your device but this is the only way for you to recover it.

Follow this tutorial. This should help you.

Connect your IPOD Touch to iTunes

Press or Hold the power and home keys 10 seconds.

Screen goes black, now release the power button

Make sure you do not release the Home key until your iTunes says "We have detected an itouch in recovery mode."

After this its simple all you got to do is a simple restore using your iTunes

The iPod touch was disabled because the wrong password was entered too many times.

Connect the iPod to the computer you normally sync it with. After that you will be able to unlock it.

1. Power off the device (Press and hold the Sleep/Wake button for a few seconds until the red slider appears, then slide the slider. Wait for the the iPod touch to turn off.
2. Press and hold the Home button while reconnecting the USB cable to iPod. When you reconnect the USB to iPod, the device should then power on. 
   
3. Continue holding the Home button while iPod starts up. While starting up, you will see the Apple logo.
4. When you see "Connect to iTunes" on the screen, you can release the Home button and iTunes will display the recovery mode message:
5. Restore and it'll download ~240mb firmware and you're done

Warning: you will lose all your data
