When activity finish date amended the resource assignment doesn't display the same finish date. Am I missing a calculation setting to keep these dates the same?

I guess you mean vacation accrual. It's hard to help you here, without knowing the exact accrual formula.
However here are some tips:
Set up a column with the start date for each employee and use the today() function to get today's date.
You can use the days360() funtion to calculate the number of days between two dates, assuming regular 30 days/month.
For more date related functions, click on the Fx (letter f with an subscript x) to the left of the value/formula entry field at the top of the spreadsheet. Thsi gives you a wizard with a list of functions. Select the Data/Time group and you see all available functions and can interactively pull them together.

To set the date Step by step as follows: Set the lever to "RATE SET", Press the clock/calendar key once and the date will be diplayed, key in the info as follows: 1/1/08 would be keyed in as "1" "." "1" "." "2008", the display will show 1.1-2008 then press the clock/calendar key, the correct date will show up.
To set the time Step by step as follows: Set the lever to "RATE SET", Press the
clock/calendar key twice and the time will be diplayed, key in the info
as follows: 12:00pm would be keyed in as "12". "00", the
display will show 12.00 then press the clock/calendar key, the
correct date will show up. For 12:00am key in "0",".","00" as it expects to see 24hr time.

ok, have your calculator set on "on" press the "time/clock" button once, when date appears on calculator press the "M+=" and hold until first number on date flashes, enter the date you want, when done switch your calculator from "on" to "print". date should be saved. do the same for time.

I copied this from another post & it worked for me:
To enter the date
1. Be sure to switch to "rate set" from GT
2. Enter the month
3. Press the decimal point
4. Enter the day
5. Press the decimal point
6. Enter the year
Example 3.09.2007
7. Press the button that look like a clock/calendar
To enter the time
1. Be sure to switch to "rate set" from GT
2. Enter the hour (please use military time)
3. Press the decimal
4. Enter the minutes
Example: 13.24 or 9.24
5. Press the button that look like a clock/calendar
Then change the "rate set" back to the GT setting.
