The oil pressure warning is on and I don't know what that means. The car just shut down and I can't even start it.

The failure to start is probably a protective measure to avoid seriously damaging the engine in the case of pump failure but the pump may not be at fault, you may have a failed oil pressure sensor. The sensors fails more often than the pumps unless your vehicle is very high mileage.
I suggest having the sensor replaced first by someone you trust. If the light is still on, then the problem gets much more expensive.

Engine clatter

Have a mechanic or shop put a mechanical oil pressure gauge in the oil pressure sending unit's mounting hole. Check oil pressure against the spec for your car. Does the warning light turn on every time this happens? If so, try to check oil pressure when the light is on-you may have an intermittent oil pressure problem, or oil pressure may just be too low. Don't believe it's a sensor, don't know how, but not familiar with your newer ride. Something as simple as a pick up tube gasket that leaks could cause low oil pressure. If that happens, the top end of engine will clatter-not getting enough oil up there.

2000 Mitsubishi eclipse the oil light came on and my car shut down. I added 1 quart of oil and it was full but the car still won't start.

The oil light does not indicate the car is low on oil (based on your discription) it indicates the oil pressure is low, the no start is most likely due to this low pressure and the fuel pump has been cut off to prevent damage to the engine from low oil pressure. Please have a shop locate the cause of the low oil pressure warning and repair it as needed. It could be a false light or a real one, which means if you drove it very far you may have damaged the engines bearings.

Low freon than low oil pressure than shuts off and restarts going down the road

Replace the oil filter as it is clogged very cheap fix. I hope this helps.

1999 Mercury Cougar Starts and then Shuts down. In the beginning the car had a rattle in the TimingChain cover and was checked and it was fine, just that the Oil pressure was low and then the lifters...

Most engines have a low pressure shut-off OR the lifters no longer work with lack of oil.
Have someone check the REAL oil pressure with a gauge.They can thread a gauge into the Oil pressure sensor hole.
Since the oil pressure sender COULD be bad,you need this true reading.
It should run just long enough to give a reading,I hope.
I don't know if the OBD II codes would show the oil pressure.UIt doesn't on my Focus.I hope you get `er going,but the engine must have at least 25 psi oil pressure.Have you replaced the oil filter? don-ohio

First, do not keep driving if the oil warning light is on or your oil pressure gauge has dropped. Stop the engine, let it sit for a few minutes, then check the oil level.
Don't ignore it. An oil pressure warning light (or low gauge reading) means one of two things: either your engine has dangerously low oil pressure, or the oil pressure sending unit that triggers the warning light (or operates your gauge) has failed. I hope this helps.

because when the engine is shut off, the oil pump is also shut off, therefore no oil pressure. no problem here!

It depends on what warning light is on!
In any case, from your description and experience, it would be your engine 'Oil' warning light: it comes on when there is not enough lubrication (thus the overheating) flowing because of low oil pressure: immediately check your oil leveland top up as required) and make sure that change your oil and oil filter as soon as possible as it is a very damaging condition and the engine could seize.
