forgive my answer but you need to look at the situation by standing back a bit. You have heated the fryer up, but then you load it with product that is not at 350 degrees and the fryer must now take that 10 minutes to pull it's temp + product back up to temperature.
That is as if I am understanding your question

SG4D Vulcan convection oven I thought the door switch was broken , when I connected the two wires that ran to the switch the oven fired up it got hot the fan ran all seemed well . won't work now why?

Our vulcan wall heater when trying to start when we release the button the flame goes out.

The thermocouple which senses the flame has probably failed or it could be a poor pilot flame (Dirty or partially blocked injector) Get a licensed gas Tech to service it if this hasn't been done previously.
