Why doesn't it shut off?
Your well could be dry, your screen could be clogged, you could have a major suction leak, your press switch could be bad, or your impeller could be broke.
If you are getting water, I'd say that your press switch is faulty.

If it is just the plug to close a hole, a standard pipe plug from a hardware store will fit. Measure the hole and ask the store clerk to help. They are very inexpensive, so if you get sizes close to your measurement you should be able to get the right one. Be sure not to cross thread (put in at a bad angle and use pipe sealing tape).
Once the water is shut off the pump keeps running
the pump is controlled by the storage tanks pressure switch , if it continues to run well after the pressure tank has refilled with water , either the switches manual override has been activated (lever) or its defective or blocked off with mud
Tank air pressure
Hi Chris...
Normally you set the air first.... but it can be done either way, just be sure that you have about 1/4 of your tank an air cushion, this stops the pump from cycling on and off to fast

I just purchased a utlitech 1/2 hp convertible jet pump. When I turn it on it just hums.

The hum is the sound created by a motor when it cannot start either because the load is excessive and it cannot do the job or if the start capacitor is bogus.
If cap is good, motor should start immediately upon turn on. Measure cap with cap meter or simply replace it. The capacitance should be the amount indicated on the cap and not more than 10 percent less.
If capacitor is good the pump itself might be frozen. Try running the motor not connected to the pump.
