Pitco 35C+ fryer. Pilot lights fine; main burner
Its a simple design. If the thermophile does the work of powering the fryer control. Do you have a good pilot flame? If the pilot flame ain't good enough then the millivolts won't be enough to operate the solenoid on the gas valve. Most folks replace both the pilot and thermophile on these fryers since the grease makes such a mess of everything. If the pilot generator is fine then the gas valve is next. Can i disconnect the hi-limit
You will not be able to use the fryer if you disconnect the hi limit. Never attempt to put jumper wire across the hi limit terminal because hi limit on fryers or any equipment is the safety device that will cut off burner flame or heater electrical supply when oil temp reaches 450F in case the thermostat or any part malfunction and If your hi limit is defective, you have to replace it so that you can use the fryer again.
FIRE IN FLUE
There may be soot/ carbon build up inside the fire tubes that's why flame crawl all the way to flue. Also check if your fryer receives the right gas pressure and type as rated on the nameplate.
The flames on our pitco
The flame is restricted to flow inside fire tubes, make sure that all fire tubes are free of soot/ carbon deposit. There should be no air flowing (hood fresh air or any ventilation) or entering the flue box because this will cause the flame to roll back to burners. Also, make sure that the unit receives the right amount of gas pressure as specified in the nameplate, this will surely eliminate carbon build up on fire tubes and burners.

Is ther a special thermocouple
There are different thermocouples for different type of gas valve. You can order the thermocouple for your pitco fryer at www.middleby.com and look for the local service/ sales office in your at pitco website there.
When the pilot light button is released the flame
Try first to clean the thermopile. If it has accumulated soot/ carbon, it will not sense enough heat from the pilot flame to generate small amount of electricity to energize the pilot valve and main valve of gas valve.
Where do I find the
You can find the model number at the nameplate located at the back of bottom compartment door.
"PROB" shows when fryer is
Computerboard will display "PROB" error when it could not sense resistance reading from the temperature probe sensor (temperature probe sensor is either open circuit or short circuited). Check first the temperature probe connectors, tighten loosely fitted connectors on wiring harness and computer board, then check if the wires are not damaged. Disconnect the temperature probe and check the resistance using an ohm meter. If the reading is either zero or infinite, you have to replace the temp probe.

Pilot should hold 30 to 45 seconds after igniting when gas valve knob is released. If there is 500 millivolts across the pilot terminals and still the piolot wont hold, you have to replace the gas valve.

I assume that the thermometer you are using is calibrated. You have to check the continuity on the hi limit terminals once the pilot light shuts off. If it has no reading, the hi limit trips prematurely and it needs replacement.
