I seen this problem over and over again, the best and simplest way to fix if to just clean your burners. Removed one by one and get them clean with hot pressure water. Most of the time, this easy and fast job will resolve the problem, and don't forget, get those burners cleaned every 6 mos. It requires a 1/2 in socket.
Fryer troubleshooting

Fryer's Digital Controller will display "BOIL" if the temperature is it reading does not exceed 212F or 100C for quite some time. Make sure that there is enough level of oil (not water) in the Fry Pot before turning it on.

Sounds like propane. Please is heavier than air. Try opening air shutters on burners.
Flames coming out the exhaust
Flames coming out of the exhaust can be caused by several things.
The fryer could be set up for natural gas and it is installed on a propane system. The fryer can be leaking oil near the burner tube and the oil is burning causing excess flame. There could be grease buildup in the flue in the back of the fryer from people hanging the baskets in the wrong place.

States and Cities to work with Natural/LP gases. You'll need to be certified and
test and license by the state and the have permit by the city to work with gas.
