Why can't I program my insignia remote to a davinci d7 home theater system

Insignia NS-4V17 will not mount
The NS-4V17 model is almost 20 years old. It was originally designed for Windows 98 and MAC OS 8.6. MAC OS 10 would not have a driver for it, so it's no surprise that it isn't working. P.S. - Windows can be cleaned, but Apples rot, lol.

Firmware problem with insignia pilot 4GB mp3 player
Please contact the manufacturer's support site, if any firmware updates are available they will be there with instructions on how to install them. I really don't think you have a firmware problem here, but it is worth a try.
Sound problems with recording to vcr using converter box
If your TV has no scart connection, no HDMI connection, then to be honest I would get a new set. There are plenty of good second hand models around, which will be better than your old set and come with a digital tuner built in.
As for the VCR, that should have a scart socket and so should the converter box. Once connected via the scart socket you should be be able to record the shows easily. If the converter box comes with a volume control, you might need to set that up to get it right. If the VCR has two scart sockets use the second one to connect the box. Use the first to connect to the TV for viewing your recordings only.
If it has only one scart, then look around on Amazon for one of these scart switching boxers.
